Alors que l&rsquo;olfaction aide les individus \u00e0 s&rsquo;orienter initialement vers des sources potentielles de nourriture, <strong>le sens du go\u00fbt<\/strong> est l&rsquo;arbitre ultime qui d\u00e9termine l&rsquo;ingestion ou le rejet d&rsquo;un aliment. <strong>Comprendre comment le syst\u00e8me nerveux central traite et encode l&rsquo;information gustative<\/strong> a des implications majeures en neuro\u00e9thologie. Un mod\u00e8le d&rsquo;insecte bien \u00e9tabli en neurosciences, en \u00e9tudes comportementales et \u00e9cologiques, qui constitue un candidat int\u00e9ressant pour l&rsquo;\u00e9tude du traitement gustatif, est l&rsquo;abeille domestique, <em><strong>Apis mellifera<\/strong><\/em>.<br>En effet, les abeilles domestiques sont des animaux eusociaux ayant d\u00e9velopp\u00e9 des comportements alimentaires sophistiqu\u00e9s, o\u00f9 les besoins nutritionnels des individus doivent \u00eatre ajust\u00e9s en fonction des besoins collectifs de la colonie. Malgr\u00e9 les nombreuses recherches consacr\u00e9es \u00e0 d&rsquo;autres modalit\u00e9s sensorielles comme l&rsquo;olfaction et la vision, <strong>peu de travaux ont explor\u00e9 les m\u00e9canismes \u00e0 l&rsquo;origine du traitement gustatif <\/strong>chez <em>Apis mellifera<\/em>. De plus, le s\u00e9quen\u00e7age du g\u00e9nome de l&rsquo;abeille a r\u00e9v\u00e9l\u00e9 une raret\u00e9 de g\u00e8nes codant pour les r\u00e9cepteurs gustatifs par rapport \u00e0 d&rsquo;autres esp\u00e8ces d&rsquo;insectes, qui poss\u00e8dent plusieurs dizaines de r\u00e9cepteurs gustatifs (GR) mais pr\u00e9sentent des comportements gustatifs moins \u00e9labor\u00e9s. Cette raret\u00e9 soul\u00e8ve une question intrigante : <strong>comment un comportement gustatif aussi riche peut-il \u00e9merger \u00e0 partir d&rsquo;un ensemble r\u00e9duit de canaux d&rsquo;entr\u00e9e gustatifs<\/strong> ?
